If you ever find yourself downtown Salida, Colorado…you need to stop at this cozy little bakery! I got to spend a day with Little Red Hen Bakery this past January and I walked away absolutely amazed. Amazed not only with the quality and beauty of their bread…but also the artistry in which they create it. You can see the passion in their faces as they talk about using heirloom flour and a tradition that goes back thousands of years. To see the flour on their hands and aprons makes me long for such a tangible trade. On Tuesdays, Thursdays and Saturdays, you can find them firing up their outdoor hearth to create some incredible wood fired ciabatta, rye, and whole wheat miches. Owners Steve and La Sal can be found running around mixing dough and pulling fresh cinnamon rolls out of the oven or on summer Saturday’s, serving fresh bread at Salida’s farmers market. They greet you with a huge smile, butter you up a sample and are always happy to tell you about their process.
